Method
Prepare Chocolate Base
Bloom cocoa
In a small heatproof cup, combine the unsweetened cocoa powder and granulated sugar. Add the hot water (about 1 tsp) and stir to form a smooth, thick paste with no lumps. This blooms the cocoa and ensures it dissolves into the drink.
If using chocolate syrup, add it to the cocoa paste and stir until smooth. The syrup can replace or supplement the sugar for a sweeter, glossier mocha.
Brew Coffee or Espresso
Pull two shots of espresso (about 2 oz total) into a pre-warmed cup. If you do not have an espresso machine, brew 1 cup of very strong coffee and measure out 3/4 cup to approximate espresso strength.
Immediately add the prepared chocolate base to the hot espresso and stir vigorously until fully combined and slightly frothy. This ensures the cocoa dissolves and integrates.
Heat and Froth Milk (Hot Mocha)
For a hot mocha: heat 1 cup milk until steaming but not boiling (about 150–160°F / 65–70°C). You can heat on the stovetop in a small saucepan or in the microwave in 20–30 second bursts, stirring between bursts.
Froth the milk using a milk frother, French press (pump to aerate), or whisk until you have fine microfoam. Reserve about 2 tablespoons of foam for the top.
Pour the steamed milk into the espresso–chocolate mixture while holding back the foam with a spoon, then spoon the reserved foam on top.
Assemble Iced Mocha (Iced Option)
For an iced mocha: add ice cubes to a tall glass. Combine the brewed espresso (or strong coffee) with the prepared chocolate base in a separate mixing cup and stir until smooth.
