Wash and cut potatoes

Wash and scrub the potatoes. Peel if you prefer (skins on give more texture). Cut the russet and Yukon Gold into 1/2-inch to 3/4-inch cubes so they cook evenly. Put cut potatoes in a bowl of cold water to prevent browning while you prepare other ingredients.

Prepare aromatics

Peel and thinly slice or dice the yellow onion to yield about 1/2 cup. Mince 1 teaspoon garlic. Chop parsley and strip thyme leaves if using.

Cook Potatoes

Parboil potatoes

Drain the potatoes from the cold water and transfer to a medium saucepan. Cover with cold water by about 1 inch, add 1/2 teaspoon kosher salt. Bring to a gentle boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are just tender when pierced with a fork but not falling apart, about 6–8 minutes depending on cube size. Drain thoroughly in a colander and let steam-dry for 2–3 minutes to remove excess surface moisture.

Heat pan and fats

While potatoes simmer, place a large heavy skillet (10–12 inch) over medium-high heat. Add 1 tablespoon neutral oil and 2 tablespoons butter. Allow butter to foam and oil to shimmer — this helps prevent sticking and promotes browning.

Sauté aromatics

Add the sliced onion to the hot pan and sauté, stirring occasionally, until translucent and starting to caramelize, about 4–5 minutes. Add the minced garlic and thyme leaves (if using) and cook for 30–45 seconds until fragrant, taking care not to burn the garlic.

Brown potatoes

Add the drained potatoes to the skillet in an even layer. Do not overcrowd; if necessary, cook in two batches. Let the potatoes sit undisturbed for 3–4 minutes to form a golden crust, then use a spatula to turn and press some pieces to create more surface contact. Continue cooking and turning until most pieces are golden-brown all over, about 6–8 more minutes total.

Season the potatoes with the remaining 1/2 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, and 1/2 teaspoon smoked paprika. Toss gently to combine and taste; adjust salt and pepper if needed.

If using, sprinkle 2 tablespoons grated Parmesan over the potatoes and toss for 30 seconds until it melts slightly and helps crisp the edges. Squeeze 1/2 teaspoon lemon juice over the potatoes to brighten the flavors and add chopped parsley; toss to combine.

Finish and serve: Remove from heat and transfer the homestyle potatoes to a warmed serving dish. Garnish with a little extra parsley and a few thyme sprigs if desired. Serve hot.
