Method
Prepare Herbed Butter
Soften butter
Remove the unsalted butter from the refrigerator and let it sit at room temperature for 30–45 minutes until soft but not melted. If short on time, cut butter into 1/2-inch cubes to speed softening (about 10–15 minutes).
Mix herbed butter
In a medium bowl, combine the softened butter, chopped thyme, chives, parsley, lemon zest, 1 teaspoon sea salt, and 1 teaspoon freshly ground black pepper. Use a spatula or fork to blend until evenly distributed and smooth. Taste and adjust seasoning — add a pinch more salt or pepper if desired.
Shape or spread
For a butter board: scrape the mixed butter onto a serving board (wood or marble). Use the back of a spoon or an offset spatula to spread the butter into an irregular rectangle or smear with peaks and valleys to create texture. Alternatively, shape into a log using plastic wrap if you prefer slices.
Prepare Toppings & Accompaniments
Toast walnuts: heat a small skillet over medium heat. Add the walnuts and toast, stirring frequently, until fragrant and lightly browned (about 4–6 minutes). Remove from heat and let cool, then roughly chop. Set aside.
Assemble garnishes: pick a few whole sprigs of thyme or chive stems and reserve for garnish. Crumble or roughly chop cooled toasted walnuts if not already done.
