Prepare chorizo
Heat a medium nonstick or cast-iron skillet over medium heat. Add the all-beef chorizo (4 oz) to the dry pan. Break up the chorizo with a spatula and cook, stirring occasionally, until browned and cooked through, about 5–6 minutes. If the chorizo releases a lot of fat, spoon off and discard excess so the eggs won't be greasy, leaving roughly 1 teaspoon in the pan for flavor.
Whisk eggs
While the chorizo is cooking, crack 3 large eggs into a bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until well combined and slightly frothy (about 20–30 seconds).
Cook eggs with chorizo
Reduce heat to medium-low. Add 1 tablespoon unsalted butter to the skillet with the cooked chorizo and let it melt and coat the pan. Pour the whisked eggs into the skillet. Let the eggs sit undisturbed for 10–15 seconds to begin setting at the edges. Using a heatproof spatula, gently push the eggs from the edges toward the center, folding to create soft curds. Continue cooking, folding occasionally, until the eggs are mostly set but still slightly glossy — about 1–2 minutes total. Remove the pan from heat just before fully set (carryover heat will finish them).
