Prepare and preheat

Preheat the oven to 350°F (175°C). Grease and line a 9-inch (23 cm) round cake pan with parchment paper on the bottom and lightly grease the sides, or use a springform pan. Allow ingredients (eggs, butter, sour cream) to come to room temperature for about 20–30 minutes.

Dry ingredients

In a large bowl, sift together 1.75 cups all-purpose flour and 0.75 cups unsweetened cocoa powder. Add 1.5 cups granulated sugar, 1.5 tsp baking soda, 0.5 tsp baking powder, and 0.5 tsp fine salt. Whisk until evenly combined and set aside.

Cream butter and sugar

In the bowl of a stand mixer fitted with the paddle (or using a hand mixer), beat 0.5 cup softened unsalted butter and 0.25 cup vegetable oil with the dry mixture briefly until incorporated. Add the dry mixture slowly while mixing on low to avoid dust clouds — you’re aiming for a slightly sandy texture. Alternatively, skip creaming and combine wet and dry in the following step.

Combine wet ingredients

In a separate bowl whisk together 2 room-temperature eggs, 1 cup sour cream, 0.5 cup whole milk, and 2 tsp vanilla extract until smooth. Add the wet mixture to the dry ingredients in two additions, mixing on low speed until just combined after each addition. Scrape the bowl to ensure there are no streaks of flour.

Final batter adjustments

If the batter seems very thick, add up to 1–2 tbsp milk to reach a thick but pourable consistency. Do not overmix — stop when no dry streaks remain. Pour batter into the prepared 9-inch pan and smooth the top with a spatula. Tap the pan gently on the counter to release air bubbles.

Bake

Bake in the preheated 350°F (175°C) oven for 35–40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Rotate the pan halfway through baking for even browning if your oven has hot spots.

Cool

Remove the cake from the oven and place on a wire rack. Allow the cake to cool in the pan for 15 minutes, then run a knife around the edge and invert onto the rack to cool completely. If using a springform pan, cool 10 minutes then release the ring and transfer the cake to the rack to finish cooling.

Chocolate Glaze (optional)

Warm 0.25 cup heavy cream in a small saucepan over medium heat until it just begins to simmer (do not boil). Remove from heat and pour over 0.75 cup bittersweet chocolate chips in a heatproof bowl. Let sit 1–2 minutes, then stir until smooth. Stir in 1 tbsp unsalted butter until glossy. Allow the glaze to cool and thicken slightly (about 5–10 minutes) before pouring over the fully cooled cake. Tilt the cake or spoon the glaze to cover the top; allow excess to drip down the sides for a rustic finish. Chill briefly (10–15 minutes) to set if desired.

Homemade Whipped Cream

Chill the mixing bowl and whisk attachment in the freezer for 5–10 minutes to help cream whip faster. Pour 1 cup heavy whipping cream into the chilled bowl. Add 2 tbsp powdered sugar, 0.5 tsp vanilla extract, and a pinch of salt.

Whip on medium-high speed with a hand mixer or stand mixer until soft peaks form, about 2–3 minutes. For stiffer peaks, continue another 30–60 seconds, watching carefully to avoid over-whipping (which will turn cream grainy). Keep chilled until ready to serve. If storing more than 30 minutes, cover and refrigerate; re-whip briefly if it loses volume.

Assembly & Serving

If you used the glaze, place the cooled and glazed cake on a serving plate. If not, dust the top lightly with 1 tsp cocoa powder or 1 tbsp confectioners' sugar for visual contrast.

Slice the cake into 8 equal pieces (serves 8). Dollop or pipe a generous spoonful of the homemade whipped cream on each slice. Sprinkle 2 tbsp chocolate shavings over the cake or individual slices for garnish.

Serve the CHOCOLATE SOUR CREAM CAKE immediately at room temperature. Leftovers can be refrigerated (covered) for up to 3 days; bring to room temperature before serving for best texture. If refrigerated with glaze, let sit 20–30 minutes to soften before serving.
