Method
Balsamic roasted butternut squash
Preheat and prepare squash
Preheat oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly oil it. In a large bowl, combine the cubed butternut squash, 2 tbs olive oil, 2 tbs balsamic vinegar, 1 tbs maple syrup (if using), 1 tbs fresh thyme, 1/2 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp black pepper. Toss thoroughly so each cube is coated.
Arrange the squash in a single layer on the prepared baking sheet with space between the cubes to promote caramelization. Roast on the middle rack for 25–30 minutes, turning once halfway through, until edges are deeply browned and centers are tender when pierced with a fork.
If the squash needs a bit more glaze at the end, drizzle an additional 1 tbs balsamic and return to the oven for 2–3 minutes, then remove and let cool slightly. Taste and adjust seasoning if needed.
Bruschetta base
While the squash roasts, slice the sourdough into 1/2- to 3/4-inch thick slices (yielding about 12–16 slices depending on loaf size). Arrange slices on another baking sheet.
Remove to a rack and, while still warm, gently rub each slice with the cut side of the halved garlic cloves to impart a mild garlic flavor. Season lightly with sea salt and a little freshly ground black pepper.
Spread & assembly
Prepare the goat cheese spread: in a small bowl, loosen the goat cheese by stirring with 2 tbs Greek yogurt or crème fraîche until spreadable and smooth. If you prefer pure goat cheese, skip the yogurt. Taste and add a pinch of sea salt and a little black pepper.
Spread about 1–1.5 tbs of the goat cheese mixture onto each toasted sourdough slice. Top each slice with 2–3 pieces of roasted butternut squash (or about 1.5–2 tbs if mashed), distributing evenly so each bruschetta has both squash and some caramelized glaze.
Drizzle each finished bruschetta with balsamic reduction (about 1/2 tsp per slice). Scatter chopped toasted walnuts or pine nuts if using (about 1/4 tsp per slice) and finish with a few torn basil leaves or microgreens.
Finish with a light pinch of fine sea salt and a crack of black pepper over the assembled bruschetta. If reserved pan juices are flavorful, spoon a small drop on each bruschetta for extra glaze.
Serve immediately while toasts are still crisp and squash is warm.
