Make watermelon puree
Remove rind and seeds from fresh watermelon and cut into chunks. Add 1 cup watermelon chunks to a blender and puree until smooth, about 15–20 seconds. Strain through a fine mesh sieve into a small bowl to remove pulp if you prefer a smoother drink (optional). You should have roughly 2–3 ounces (about 1/4 cup) of fresh watermelon juice concentrated; if you have more, it's fine — it will add more flavor.
Prepare glass and muddle
In a highball or Collins glass, add the fresh mint leaves and the 0.5 oz simple syrup. Gently muddle the mint about 3–4 times to release aroma—do not pulverize. Add the fresh lime juice and the strained watermelon puree to the glass and stir briefly to combine.
Add ice and seltzer
Fill the glass with crushed ice (about 1 cup). Open two cans of White Claw Watermelon. Pour one can slowly into the glass to preserve carbonation, then top with the second can as needed to reach desired strength and fizz. Stir gently once to combine flavors without flattening the seltzer.
Garnish and serve
Garnish with a lime wheel or wedge on the rim and a small watermelon wedge or a skewer of watermelon cubes. Optionally slap the remaining mint sprig between your palms to awaken the oils and tuck it into the drink. Serve immediately while fizzy.
