Prepare wings or boneless pieces

If using whole wings, separate into drumettes and flats and pat completely dry with paper towels. If using boneless chicken, cut into 1.5–2-inch bite-sized pieces and pat dry.

Season and (optional) marinate

In a large bowl, combine salt, pepper, garlic powder and paprika. Toss the wings or boneless pieces in the seasoning. For boneless pieces, optionally add buttermilk and refrigerate 30–60 minutes to tenderize; drain before coating.

Coat for extra crisp (optional)

For traditional wings, toss lightly with baking powder in addition to the seasoning to help crisp the skin. For boneless, dredge drained pieces in the 1/2 cup flour (season flour with a pinch of salt and pepper) and shake off excess.

Choose cooking method

You can deep-fry, oven-bake, or air-fry the wings. Preheat appropriate equipment: oil to 350–375°F (175–190°C) for frying; oven to 425°F (220°C) with a wire rack on a baking sheet for baking; air fryer to 400°F (200°C).

Deep-fry method

Heat at least 1 inch of oil in a heavy skillet to 350–375°F. Fry wings in batches without crowding for 8–10 minutes for traditional wings, or 4–6 minutes for boneless pieces, until internal temperature reaches 165°F and skin is golden and crisp. Drain on a wire rack or paper towels.

Oven-bake method

Toss wings with a tablespoon of oil (from the measured oil) and arrange skin-side up on a wire rack set over a baking sheet. Bake at 425°F for 30–40 minutes for traditional wings (flip once halfway) or 18–22 minutes for boneless, until internal temperature 165°F and exterior browned. For extra crispness, broil 1–2 minutes at the end—watch carefully.

Air-fry method

Place wings in a single layer in the air-fryer basket and cook at 400°F (200°C) for 20–24 minutes for traditional wings, shaking the basket every 6–8 minutes; boneless pieces take 10–14 minutes, turning once. Ensure 165°F internal temperature.

Buffalo Sauce (or substitute)

While wings cook or immediately after they are done, prepare the sauce. In a small saucepan over low heat, combine hot sauce, butter, honey (if using) and vinegar. Stir until butter melts and sauce is smooth and slightly thickened—about 2–3 minutes. Do not boil.

Place the cooked wings in a large clean bowl, pour the warm sauce over them, and toss gently until evenly coated. For a milder option, reserve some sauce and add to individual servings.

Sides & Serving

Arrange the sauced wings on a serving platter. Serve immediately with celery sticks and both ranch and bleu cheese dressings on the side so guests can choose. Garnish with chopped parsley if desired.

Portion guidance: serve 7 pieces for a smaller portion or 10 pieces for a full order. Include about 3–4 celery sticks and 1/4–1/2 cup of chosen dip per order.
