Prepare filling

In a large mixing bowl, combine the shredded cooked chicken, thawed corn, rinsed black beans, diced red bell pepper, sliced green onions, and chopped cilantro.

Mix cheeses and seasonings

Add the softened cream cheese, shredded cheddar, lime juice, ground cumin, chili powder, salt, and black pepper to the bowl. Use a spatula to fold and mix until the cream cheese is evenly distributed and the mixture is cohesive. Taste and adjust seasoning if needed. The filling should be thick and slightly creamy so it will hold together when wrapped.

Salsa (homemade)

Combine the diced tomatoes, minced red onion, minced jalapeño (if using), chopped cilantro, lime juice, and salt in a small bowl. Stir and let rest at room temperature for 10–15 minutes to let flavors meld. Refrigerate until ready to serve.

Sauce

Mix the sour cream with lime zest, ground cumin, and a pinch of salt in a small bowl. Stir until smooth and refrigerate until serving.

Wrappers & Assembly

Make flour paste

Whisk together the 2 tablespoons flour and 2 tablespoons water to form a smooth paste; this will act as the glue to seal the wrappers.

Assemble egg rolls

Place one egg roll wrapper on a clean work surface in a diamond orientation (one corner pointing toward you). Put about 2 to 3 tablespoons of the filling mixture near the corner closest to you, leaving a 1/2-inch margin on the sides. Fold the bottom corner up over the filling, tuck in the left and right corners snugly, then roll tightly toward the top corner. Brush the top corner with the flour paste and press to seal. Repeat with remaining wrappers and filling. You should get about 10–12 egg rolls depending on how full you fill them.

Fry method

Heat about 1 to 1 1/2 inches of vegetable oil in a heavy skillet or Dutch oven over medium-high heat to 350°F (175°C). Fry egg rolls in batches, seam side down, 2–3 minutes per side until golden brown and crisp. Use tongs to turn gently. Transfer to a paper towel–lined tray to drain. Keep warm in a 200°F (95°C) oven if needed.

Baked method (lighter)

Preheat oven to 425°F (220°C). Place assembled egg rolls seam side down on a parchment-lined baking sheet. Lightly brush or spray each roll with oil. Bake for 12–16 minutes, turning once halfway through, until golden and crisp. For extra even browning, finish under the broiler 30–60 seconds while watching closely.

Air-fryer method

Preheat air fryer to 400°F (200°C). Lightly brush egg rolls with oil and place in a single layer in the basket. Air-fry for 8–10 minutes, turning halfway, until golden and crisp.

Serve

Serve egg rolls hot with the homemade salsa and the lime-sour cream sauce. Garnish with extra chopped cilantro and lime wedges if desired.
