Marinate

Pat salmon fillets dry with paper towels. In a small bowl whisk together 2 tbs olive oil, minced garlic, lemon zest from the whole lemon, 1 tbs lemon juice (from the lemon), chopped dill (or parsley), 1 tsp kosher salt and 1 tsp black pepper. Brush or spoon the mixture over both sides of the fillets and let sit at room temperature for 15 minutes (or refrigerate up to 30 minutes).

Preheat grill

Preheat an outdoor grill or grill pan to medium-high heat (about 400–450°F / 200–230°C). Oil the grates or brush pan with a little oil to prevent sticking.

Grill

Place salmon on the grill skin-side down. Close the lid and cook undisturbed for 4–6 minutes depending on thickness. Flip carefully and grill an additional 1–3 minutes until the internal temperature reaches 125–130°F (52–54°C) for medium-rare to medium, or 140°F (60°C) if you prefer well done. Remove from grill and let rest for 3 minutes. Finish with a squeeze of the remaining lemon juice.

Garlic Mashed Potatoes

Cook potatoes and garlic

Place the peeled and chunked potatoes and whole garlic cloves in a medium pot and cover with cold water by 1 inch. Add a pinch of salt. Bring to a boil, then reduce to a simmer and cook until potatoes are very tender, 12–15 minutes. Drain well.

Mash and season

Return drained potatoes and garlic to the hot pot to dry for 1 minute. Add 3 tbs butter and warm milk (start with 3/4 cup and add more to reach desired consistency). Mash with a potato masher or use a ricer for very smooth potatoes. Stir in 2 tbs cream cheese or sour cream if using. Season with 1 tsp salt and 1/2 tsp black pepper, taste and adjust. Keep warm until serving. Stir in chopped chives or parsley just before plating.

Broccoli

Cook broccoli

Toss broccoli florets with 1 tbs olive oil, 1/2 tsp salt and 1/4 tsp black pepper. You can steam, roast or sauté: For steaming, steam until bright green and tender-crisp, 4–6 minutes. For roasting, spread on a sheet tray and roast at 425°F (220°C) for 12–15 minutes, turning once. For sautéing, cook in a hot skillet 5–7 minutes until tender-crisp and lightly browned.

Finish

If desired, finish the broccoli with a squeeze of the reserved 1/4 lemon and a pinch of additional salt to taste before serving.
