Prepare Ingredients

Measure and sift

Weigh or measure cacao powder and powdered sugar. Sift the cacao powder and powdered sugar together into a bowl to remove lumps and ensure smooth texture. If using milk powder, sift it with the dry ingredients as well.

Chop cocoa butter

Chop cocoa butter into small, even pieces so it melts quickly and evenly.

Melting and Combining

Double boiler setup

Place a heatproof bowl over a saucepan with a few centimeters of simmering water (water should not touch the bowl). Keep heat low to maintain a gentle simmer; avoid boiling. This prevents scorching the cocoa butter.

Melt cocoa butter

Add the chopped cocoa butter to the bowl and stir occasionally until fully melted and clear, about 5–8 minutes.

Incorporate dry ingredients

Remove the bowl from the heat for a moment (lift off the pan) and quickly whisk in the sifted cacao powder, powdered sugar, and milk powder (if using) until smooth and fully incorporated. If the mixture thickens or becomes grainy, return briefly to the double boiler and stir until smooth, taking care not to overheat.

Add flavor and salt

Stir in the sea salt and vanilla extract until evenly distributed.

Tempering and Setting

Optional tempering (for shiny snap)

To temper for a glossy finish and firm snap, cool the melted mixture to about 27–28°C (80–82°F) by spreading it on a cool marble surface or stirring in a few tablespoons of finely chopped solid chocolate (seed method). Then gently re-warm to working temperature: dark chocolate 31–32°C (88–90°F), milk chocolate 30–31°C (86–88°F). Use a thermometer for accuracy.

Pour into molds

Pour the finished chocolate into silicone molds, a lined shallow tray (for slabs), or chocolate bar molds. If using add-ins, sprinkle chopped nuts, dried fruit, or cocoa nibs into molds before pouring or scatter them on top after pouring.

Remove air bubbles

Tap the mold gently on the counter a few times to release trapped air bubbles and ensure even distribution.

Finish and cool

Sprinkle any finishing sea salt flakes on top if desired. Let the chocolate set at room temperature until firm (1–2 hours) or accelerate by refrigerating for 20–30 minutes. Avoid prolonged refrigeration as it can cause bloom (whitish streaks).

Unmolding and Storage

Unmold

Once fully set and firm to the touch, gently pop the chocolates out of the molds. If using a slab, break into pieces with a knife or by hand.

Store

Store finished chocolate in an airtight container in a cool, dry place away from direct sunlight and strong odors. Ideal temperature is 15–18°C (59–64°F). Properly stored, homemade chocolate keeps 2–3 months.
