Muddle

Place the fresh mint leaves (reserve one small sprig for garnish), simple syrup and fresh lime juice into a sturdy highball or Collins glass. Gently muddle the mint with a muddler or the back of a spoon 6–8 times to release the oils. Avoid over-muddling which can make the drink bitter.

Add spirits and ice

Add the Bacardi rum and blue curaçao to the glass. Fill the glass about three-quarters full with crushed ice (approximately 1 cup).

Stir and top

Using a bar spoon, gently stir the mixture 6–8 revolutions to integrate the ingredients and chill the drink.

Top with soda

Top off with approximately 2 oz (about 60 ml) of chilled soda water. If you prefer a lighter finish, add more soda to taste.

Finish and garnish

Give the drink one gentle uplift with the spoon to incorporate the soda without dissipating carbonation. Optionally add 1 dash of Angostura bitters on top for aromatic complexity. Garnish with the reserved mint sprig (clap it between your palms once to release aroma) and a lime wheel or wedge on the rim.

Serve

Serve immediately with a straw and a small cocktail spoon for crushed ice. Sip and enjoy.
