Prepare shaker and ingredients
Chill a coupe or martini glass by filling with ice and cold water; set aside. Measure out gin, blue curaçao, fresh lemon juice, simple syrup, and egg white if using.
Dry shake (if using egg white)
If using egg white to create a silky foam, combine gin, blue curaçao, lemon juice, simple syrup, and egg white in a cocktail shaker without ice. Seal and shake vigorously for 10–15 seconds to emulsify and build foam.
Wet shake
Add ice to the shaker (about 4 large cubes). Seal and shake vigorously for 10–15 seconds until the shaker is well chilled and the outside is frosty. This chills and dilutes the drink while creating a frothy texture when egg white is used.
Strain
Discard ice and water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer if available to catch ice shards and produce a smooth surface.
Garnish
Garnish with a lemon wheel or a thin lemon twist laid on the surface of the drink. Optionally drop a maraschino cherry into the center or skewer it on the rim. Serve immediately.
