    Prepare oysters

    Rinse shucked oysters gently and drain in a colander set over a bowl to collect any liquid. Pat each oyster lightly with paper towel to remove excess moisture but don’t dry completely — a little liquor helps flavor.

    Set up breading station

    In one shallow bowl combine the flour, cornstarch, 0.5 tsp salt, cayenne, smoked paprika, and 0.5 tsp black pepper. In a second bowl whisk the eggs with buttermilk until smooth. In a third bowl place the breadcrumbs.

    Bread the oysters

    Working in batches, dredge each oyster first in the flour mixture, shaking off excess, then dip into the egg-buttermilk wash, letting excess drip off, and finally press into the breadcrumbs to coat fully. Place breaded oysters on a wire rack set over a baking sheet. Let rest 10 minutes to help the coating adhere.

    Heat oil

    Pour about 1 to 1 1/2 inches of neutral oil into a medium heavy skillet or Dutch oven (about 2 cups). Heat over medium-high to reach 350°F (175°C). If you don’t have a thermometer, test with a small breadcrumb—if it sizzles and browns in ~30 seconds, oil is ready.

    Fry oysters

    Fry oysters in 2–3 small batches so oil temperature remains steady. Cook 1 1/2 to 2 minutes per side, turning once, until golden brown and crisp. Use a slotted spoon or spider to transfer to a paper-towel-lined plate, then keep warm on a rack in a low oven (200°F / 95°C) while finishing remaining oysters.

    Toast fennel and crisp bacon

    Warm a dry skillet over medium heat and toast the fennel seeds 30–60 seconds until aromatic; crush lightly with the back of a spoon or mortar. In the same skillet add the bacon slices and cook over medium heat until crisp, turning occasionally, about 8–10 minutes. Remove bacon to a paper towel-lined plate and drain. When cool, roughly chop the bacon and stir together with the crushed fennel, 1 tbs olive oil, and 1/4 tsp black pepper. Reserve 1 tablespoon of the fennel-bacon mixture for garnish and fold the rest into the creamed spinach (next section).

Creamed Spinach (Rockefeller-style base)

    Wilt the spinach

    In a large skillet over medium heat, melt the butter. Add the minced shallot and cook 2–3 minutes until softened and translucent. Add the garlic and cook 30 seconds more. Add the spinach in batches, stirring and wilting each batch before adding more. Once fully wilted (2–4 minutes), season with 1/2 tsp salt and 1/4 tsp black pepper.

    Build the cream base

    Lower heat to medium-low. Stir in the cream cheese until incorporated, then add the heavy cream, Worcestershire sauce, and lemon zest. Cook gently until the mixture begins to thicken, about 2–3 minutes.

    Finish creamed spinach

    Stir in the grated Parmesan until melted and combined. Fold in the toasted fennel bacon mixture (except reserved tablespoon) and taste; adjust salt and pepper as needed (total salt for spinach section about 3/4 tsp). Keep warm over the lowest heat, stirring occasionally — the mixture should be creamy and spreadable, not watery.

Assembly & Garnish

    Divide the warm creamed spinach among 4 serving plates (or keep on a single platter). Place 3 fried oysters on top of the spinach on each plate.

    Sprinkle the reserved fennel-bacon crumbs over the oysters and spinach. Finish with chopped parsley and optional microgreens or chives. Serve with lemon wedges on the side for squeezing and an extra pinch of black pepper if desired.
