Cornbread Batter

Preheat and prepare dry ingredients
Preheat your oven to 425°F (220°C). Place a 6-8 inch (or 10-12-inch for multiple muffins) well-seasoned cast-iron skillet or a 6-cup cast-iron muffin pan in the oven to heat while you mix the batter. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until evenly combined.

Combine wet ingredients
In a separate bowl, whisk the buttermilk and eggs until smooth. Stir in the melted butter until incorporated. If your melted butter is very hot, let it cool slightly before adding so it doesn't scramble the eggs.

Make the batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix — some small lumps are fine. The batter should be pourable but fairly thick; if it's extremely thick, add up to 2 tablespoons extra buttermilk.

Heat the fat in the skillet
Carefully remove the hot cast-iron skillet or muffin pan from the oven using oven mitts. Add the room-temperature butter (or vegetable oil) and the optional teaspoon of neutral oil to the pan(s). Swirl to coat each muffin well or the entire skillet surface. The butter should sizzle and begin to brown at the edges — this step is critical for the deeply browned, crispy crust.

Portion batter and create crisp edges
If using a single skillet to make multiple individual muffins, spoon or ladle the batter into the prepared wells or into the skillet for a skillet-style cornbread, leaving space between mounds for expansion. For a 6-cup cast-iron muffin pan, fill each well about 3/4 full. If using a large skillet to make drop-style muffins, spoon 6 equal mounds into the skillet spaced apart. The hot butter/oil will immediately start crisping the bottoms and sides.

Bake for browning and crispness
Return the skillet or muffin pan to the oven. Bake at 425°F (220°C) for 12–15 minutes, checking at 12 minutes. The muffins are done when they are deep golden-brown and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). For extra deep browning, you can finish with 1–2 minutes under the broiler — watch closely to avoid burning.

Make the hot honey butter
In a small bowl, combine the softened butter, honey, hot sauce, crushed red pepper (if using), salt, and lemon juice. Whisk or beat with a fork until fully combined, smooth, and spreadable. Taste and adjust heat or honey sweetness to preference. If you prefer a thinner sauce to drizzle, microwave the mixture in short 5–7 second bursts until it loosens slightly (do not overheat).
