Fold in 3 cups grated sharp cheddar and 1 cup grated monterey jack until evenly distributed. Add 1 cup drained diced pimentos, 3 tablespoons thinly sliced green onion, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Mix until uniform. Taste and adjust seasoning, adding a pinch more salt or hot sauce if desired.

Assemble and Bake
Transfer the mixture to a 1.5–2 quart (or an oven-safe shallow baking dish ~8-inch) dish and smooth the top. Drizzle 1 tablespoon olive oil over the surface and sprinkle the optional 1/2 cup shredded extra cheddar evenly on top. In a mixing bowl combine 3 cups all-purpose flour and 1.5 teaspoons kosher salt. Make a well and add the yeast mixture plus 2 tablespoons olive oil. Mix with a wooden spoon until a shaggy dough forms. Turn out onto a lightly floured surface and knead 6–8 minutes until smooth and slightly springy. Alternatively, use a stand mixer with dough hook for 4–5 minutes.

Lightly oil a clean bowl with 1 tablespoon olive oil, place the dough inside, turning to coat. Cover with plastic wrap or a towel and let rise in a warm draft-free place until doubled, about 60–75 minutes.

Shape and Second Rise
Generously oil a baking sheet and dust with 1 teaspoon cornmeal or semolina. Turn the risen dough onto the sheet and gently press to a rough rectangle about 9x12 inches and about 1 inch thick.
