Pesto Aioli

Make aioli

In a small bowl, combine 0.25 cup mayonnaise, 1 tablespoon basil pesto, 0.5 teaspoon lemon juice, 0.25 teaspoon minced garlic, 0.125 teaspoon salt and 0.0625 teaspoon black pepper. Whisk until smooth and taste; adjust with a few drops more lemon or a pinch more salt if desired. Refrigerate until ready to assemble.

Cook bacon

Heat a skillet over medium heat. Add the 3 slices of bacon and cook 6–8 minutes, turning occasionally, until crispy to your liking. Transfer bacon to a paper towel-lined plate to drain; reserve 1 teaspoon bacon fat in the skillet if present (or wipe skillet and proceed with butter and oil).

Toast bagel

While bacon cooks, split the 2 Asiago bagels and toast them lightly in a toaster or in a dry skillet over medium heat until golden and slightly crisp, about 2–3 minutes per cut side. Set toasted bagels aside.

Cook eggs

In the same skillet (wipe out excess fat if too much remains) add 1 tablespoon unsalted butter and 1 teaspoon vegetable oil over medium-low heat. Crack the 2 eggs into a bowl, whisk lightly with 0.25 teaspoon salt and 0.125 teaspoon black pepper. Pour eggs into skillet and cook, stirring gently for soft-scrambled style, 1.5–2 minutes until set but still moist. Alternatively, cook as an omelet or fried eggs to preference (see note). Remove from heat.

Assemble sandwich

Spread about 1 tablespoon of the prepared pesto aioli onto the cut face of each toasted bagel half (reserve a little for the top if desired). On the bottom halves, layer: 1 slice sharp cheddar, the warm eggs (divide evenly), the 3 bacon slices (arrange to cover), then the slice of American cheese, and top with the second slice of sharp cheddar. Place the top bagel halves over the cheese. If you prefer melted cheese, return assembled open-faced sandwiches (without top halves) to the skillet on very low heat or place under a broiler for 30–60 seconds until the cheese softens/melts, then finish assembly.

Serve

Cut each sandwich in half if desired and serve immediately while warm. Serve with extra pesto aioli on the side for dipping.
