Base Pancakes
Mix dry ingredients
In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder and fine sea salt until evenly combined.
Combine wet ingredients
In a separate medium bowl whisk the whole milk, eggs, melted butter and vanilla extract until smooth and slightly frothy.
Make batter
Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined. A few small lumps are okay — do not overmix. Let the batter rest for 5 minutes; it will thicken slightly.
Cooking & Add-ins
Preheat skillet
Heat a nonstick or cast-iron skillet over medium heat for 3–4 minutes. Add 1 tablespoon unsalted butter and swirl to coat. Reduce heat to medium-low so pancakes don’t brown too fast.
Cook blueberry pancakes
For each pancake, pour about 1/3 cup of batter onto the hot skillet. Sprinkle a few fresh blueberries evenly onto the batter. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through. Transfer to a warm plate and keep warm while you cook remaining pancakes.
Cook banana-bacon pancakes (special combo)
Wipe skillet if needed and add a little butter. Pour 1/3 cup batter for each pancake and top with 2–3 thin banana slices and a few crumbles of cooked bacon before the batter sets. Cook 2–3 minutes until bubbles appear, then flip and cook 1–2 minutes until done. This yields savory-sweet pancakes that form the Special of the Week combo.
Keep warm
Place cooked pancakes on an oven-safe plate and keep warm in a 200°F (95°C) oven while finishing the rest so all are served hot.
Assemble & Serve
Stack pancakes two or three high depending on the option: two pancakes per serving for the Two ($10.25) portion or three pancakes per serving for the Three ($12.25) portion. For each stack, alternate flavors if making mixed stacks (example: blueberry then banana-bacon then blueberry).
Serve immediately with extra maple syrup on the side and a fork and knife. Suggest pairing: coffee or fresh-squeezed orange juice.
