Preheat the oven to 350°F (175°C). Grease three 8-inch round cake pans (or two 9-inch pans) and line the bottoms with parchment; grease parchment and dust lightly with flour.

Measure and prepare ingredients: grate carrots finely (use a box grater or food processor), chop walnuts and toast them in a dry skillet over medium heat for 3–4 minutes until fragrant, then cool. Soften cream cheese and butter to room temperature.

Make the Batter

Whisk dry ingredients

In a large bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, nutmeg, and ginger until evenly combined.

Combine sugars and wet ingredients

In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl with a hand mixer), beat granulated sugar, brown sugar, eggs, and vegetable oil on medium speed until smooth and slightly thickened, about 2–3 minutes. Scrape down the bowl as needed.

Add buttermilk and vanilla to the wet mixture and mix until incorporated.

Combine wet and dry

With the mixer on low speed, add the dry ingredients in two additions, mixing just until combined. Do not overmix; stop when no dry streaks remain. The batter will be thick.

Fold in grated carrots, toasted walnuts, raisins, and shredded coconut (if using) with a spatula until evenly distributed.

Divide batter evenly among prepared pans (use a kitchen scale or scoop for even layers). Smooth the tops with an offset spatula.

Bake & Cool

Bake on the center rack until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter), about 25–30 minutes for 8-inch pans or 30–35 minutes for 9-inch pans. Rotate pans halfway through baking for even browning.

Allow cakes to cool in pans on a wire rack for 10–15 minutes. Run a thin knife around the edges, invert onto racks, remove parchment, then flip right-side-up and cool completely (1–2 hours) before frosting. Cooling completely prevents the frosting from sliding.

Make the Cream Cheese Frosting

In a large mixing bowl or the stand mixer bowl fitted with the paddle attachment, beat the softened cream cheese and softened butter together on medium speed until smooth and homogeneous, about 2–3 minutes. Scrape down sides.

With the mixer on low, gradually add the sifted confectioners' sugar, 1 cup at a time, ensuring each addition is incorporated before adding more. After all sugar is added, increase speed to medium and beat until light and fluffy, 2–3 minutes. Add vanilla, lemon zest (if using), and salt; mix briefly to combine. Taste and adjust sweetness or salt as needed.

If the frosting is too soft for spreading (warm kitchen), chill for 15–20 minutes; if too stiff, add 1–2 teaspoons of milk or cream to reach spreading consistency.

Assemble & Finish

If cake layers have domed, level them with a serrated knife or cake leveler for stable stacking.

Place the first layer on a cake board or serving plate. Spread about one-third of the frosting over the top in an even layer. Repeat with the second layer (and third, if using), stacking carefully and using a small amount of frosting between layers to hold them in place.

Apply a thin 'crumb coat' of frosting over the entire cake to seal crumbs. Chill the cake for 20–30 minutes to set the crumb coat.

Finish by applying the remaining frosting in a smooth or textured finish. Use an offset spatula or bench scraper for clean sides. Reserve a small amount of frosting for piping if desired.

Garnish the top edge or center with toasted walnut halves and extra grated carrot. Optionally pipe rosettes or decorative borders with reserved frosting. Chill for 15 minutes to set the frosting, then bring to room temperature 20–30 minutes before serving for best texture.
