Brew Tea

Boil water

Bring 32 fl oz (about 1 liter) of fresh water to a near boil (about 200°F / 93°C). For green or delicate teas, use 175–185°F (80–85°C) instead and reduce steep time by 1–2 minutes.

Steep tea

Place 4 tsp whole-leaf black tea (or chosen blend) in a heatproof teapot or infuser. Pour the hot water over the leaves and add sliced ginger. Steep for 4–5 minutes for black tea (3 minutes for green). Do not oversteep to avoid bitterness.

After steeping, strain the tea into a pitcher, discarding the spent leaves and ginger slices (or leave a few ginger slices in if you want stronger ginger flavor).

Sweeten & Flavor

While the brewed tea is still warm, stir in 2 tbsp honey (or simple syrup if preparing iced tea) until fully dissolved. Add 2 tbsp fresh lemon juice and 2 tbsp fresh orange juice and stir to combine. Taste and adjust sweetness or citrus to preference.

Add 8 fresh mint leaves to the warm tea and gently bruise them between your fingers before adding to release aroma. Allow the tea to cool slightly if making the iced version (about 10–15 minutes).

Serve Hot

If serving hot, ladle into warmed cups. Garnish each cup with a lemon slice and a mint leaf. Serve immediately.

Serve Cold (Iced)

To make iced Mighty Leaf Tea, fill a glass or pitcher with 3 cups of ice. Pour the slightly cooled, sweetened tea over the ice. Stir to chill and dilute slightly. Garnish with lemon slices and additional fresh mint leaves. Serve with a straw.

If you prefer a clearer iced tea, chill the strained tea in the refrigerator for 30–45 minutes before pouring over ice to avoid excess dilution.
