Prepare chicken

If breasts are thick, butterfly or pound to an even thickness about 1/2 inch. Pat dry with paper towels. Season both sides with 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp paprika.

Set up dredging station

Place flour in a shallow bowl. In a second bowl whisk the egg and 2 tablespoons milk until combined. In a third bowl combine panko and grated Parmesan.

Dredge chicken

Coat each chicken breast first in flour (shake off excess), then dip into the egg mixture, then press into panko-Parmesan so breadcrumbs adhere evenly. Let rest on a plate for 5 minutes to help coating set.

Fry chicken

Heat 1/2 cup vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F if using a thermometer). Add chicken and cook 3-4 minutes per side until golden brown and internal temperature reaches 165°F. Adjust heat as needed to avoid burning the crust. Transfer to a wire rack or paper towel-lined plate to drain.

Cook bacon

While chicken rests, cook 4 bacon slices in a skillet over medium heat until crisp, about 6-8 minutes, turning as needed. Drain on paper towels and chop or leave whole per preference.

Prepare avocado

Halve and pit the avocado, scoop flesh and slice or dice. Toss gently with 1 tsp lemon juice, 1 tsp olive oil, 1/4 tsp salt and 1/4 tsp black pepper to prevent browning and season.

Prepare mozzarella

If using a ball of fresh mozzarella, slice into 4 pieces or tear into bite-sized pieces. Pat lightly to remove excess moisture.

Assemble

Place a handful of mixed greens (if using) on plates. Top each plate with one crispy chicken breast. Add sliced mozzarella on top of the hot chicken so it softens slightly. Spoon avocado over or beside the chicken and arrange bacon. Drizzle a little olive oil over greens and finish with an extra pinch of salt and pepper to taste.

Make sauce

Whisk together 3 tbs mayonnaise, 1 tbs sour cream, 1 tsp hot sauce, 1 tsp lime juice and 1/8 tsp salt until smooth. Taste and adjust seasoning. Serve a spoonful alongside or drizzle over the assembled chicken.
