Prepare vegetables and fillings
Clean mushrooms and slice thinly to yield about 1/2 cup. Seed and finely dice the bell pepper to yield about 1/4 cup. Halve the avocado, remove the pit, scoop out half and place in a small bowl; mash with a fork until slightly chunky and season with a pinch of salt and a grind of pepper. Cut cream cheese into small spoonable pieces so it will warm quickly in the finished omelet. If using, finely chop chives.
Separate 4 large egg whites into a mixing bowl (discard yolks or reserve for another use). Add 1 tablespoon cold water, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk vigorously until frothy and slightly aerated, about 20–30 seconds.
Cook vegetables
Heat a nonstick skillet over medium heat and add 1 tablespoon butter or olive oil. When the fat is hot and shimmering (but not smoking), add the sliced mushrooms and diced bell pepper. Sauté, stirring occasionally, until the mushrooms release their liquid and it evaporates and the vegetables are tender and lightly browned, about 4–5 minutes. Season lightly with a pinch of salt and a small grind of pepper. Transfer the vegetables to a plate and keep warm.
Cook omelet
Reduce heat to medium-low. Add a small pat of butter or a light swipe of oil to the skillet if needed so the surface is lightly coated. Pour the whisked egg whites into the skillet and tilt the pan to distribute them in an even layer. Let the egg whites set undisturbed for about 30–45 seconds, then use a spatula to gently push the cooked edges toward the center, tilting the pan to allow uncooked whites to flow to the edges. Continue until the top is mostly set but still slightly moist, about 1–2 minutes total.
Place the sautéed mushrooms and bell pepper on one half of the omelet in an even layer. Dollop the cream cheese pieces over the vegetables so they will soften and become creamy as the omelet finishes cooking. Cook another 20–30 seconds, just until cream cheese begins to soften but not fully melt.
Using a spatula, carefully fold the empty half of the omelet over the filled half to form a half-moon. Let cook for another 15–20 seconds to warm the filling through but avoid overcooking the egg whites. Slide the omelet onto a plate with the seam side down.
Finish & serve
Serve immediately while warm. Suggested accompaniments: whole-grain toast, mixed greens, or fresh salsa.
