Cook bacon

If using bacon: place bacon strips in a cold skillet in a single layer. Turn heat to medium and cook 6–10 minutes, flipping occasionally, until desired crispness. Transfer to a paper towel–lined plate to drain. Keep warm in a low oven (90–100°C / 200°F) if preparing ahead.

Cook sausage

If using sausage: for links, brown in a skillet over medium heat, turning occasionally, about 8–12 minutes until internal temperature reaches 71°C (160°F). For patties, cook 4–5 minutes per side until browned and cooked through. Keep warm if preparing ahead.

Eggs

Crack the eggs into a medium bowl. Add the milk, 1/2 teaspoon salt (reserve remaining for tortillas), and the black pepper. Whisk until blended and slightly frothy.

Heat a nonstick skillet over medium-low heat and add the unsalted butter. When butter is melted and foamy but not browned, pour in the egg mixture.

Let eggs sit undisturbed for 10–15 seconds, then gently push the eggs from the edges toward the center with a silicone spatula, forming large soft curds. Continue folding gently until eggs are mostly set but still moist and slightly glossy, 2–3 minutes total. Remove from heat immediately to avoid overcooking.

Taste and adjust seasoning with remaining salt if needed. Keep eggs warm.

Warm the whole wheat tortillas for pliability: hold each tortilla in a dry skillet over low heat for about 15–20 seconds per side or wrap in a damp paper towel and microwave 15–20 seconds. Spread a thin layer of butter or oil on one side of each tortilla if desired for flavor and to help browning.

Place a warmed tortilla on a flat work surface, buttered side down if using. Spoon approximately 1/4 of the scrambled eggs (about 2 eggs worth) onto the center third of the tortilla lengthwise.

Top the eggs with about 1/4 cup shredded cheddar, 3/4 tablespoon pico de gallo, and 2 strips of cooked bacon or 2 sausage links/patties (slice patties or cut links in half lengthwise if desired). Sprinkle with about 1/2 tablespoon chopped cilantro and hot sauce to taste, if using.

To fold: fold the bottom third of the tortilla up over the filling, fold the two sides toward the center, then continue rolling away from you tightly to form a secured wrap. Repeat for remaining tortillas.

Optional — brown the finished wraps: heat a clean skillet over medium heat and place each wrap seam-side down. Toast 1–2 minutes per side until golden and crisp and cheese begins to melt. Slice in half diagonally and serve immediately.
