Pretzel Bun
Prep and Grill Buns
Slice pretzel buns in half horizontally. Heat a skillet or griddle over medium heat. Spread 1/2 tablespoon unsalted butter on each cut face of the buns (total 2 tbs used across both buns). Place buns cut-side down on the hot skillet and grill for 1–2 minutes until golden and slightly crisp. Remove and keep warm.

Cook Sausage
Cook the sausage: If using raw breakfast sausage patties, cook in the same or a separate skillet over medium heat 4–6 minutes per side until internal temperature reaches 160°F (71°C). If using fully cooked patties, heat 2–3 minutes per side until warmed through and browned. Keep sausage warm with the bacon.
Egg Omelet
Beat Eggs
In a bowl, crack the 4 large eggs. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk until mixture is uniform and slightly frothy.
Cook Omelet
Heat a nonstick skillet over medium-low heat and add 1 tablespoon butter. Once melted and foaming, pour in the beaten eggs and tilt the pan to distribute. Using a spatula, gently push cooked edges toward the center while allowing uncooked egg to flow out; cook until eggs are mostly set but slightly moist on top, about 2–3 minutes.
Add Cheese and Fold
Sprinkle 3/8 cup (half of the shredded cheddar) over one half of the omelet. Let it melt 20–30 seconds, then fold the omelet in half with the spatula. Slide the omelet onto a plate and cut in two to form two egg portions (each portion ~2-egg omelet). Repeat steps if you prefer to cook two individual omelets rather than one large folded omelet.
Assembly
Build Sandwich
Assemble the sandwich: Place the bottom halves of the grilled pretzel buns on plates. Lay one cooked sausage patty on each bottom bun. Place one folded 2-egg omelet (or half of the large omelet) on top of each sausage. Top each omelet with 1/4 cup shredded cheddar (remaining cheese divided) so it melts slightly from the warm eggs and sausage. Add 1 bacon strip (or fold two strips) on top of the cheese.
