Method
Pickled onions
Combine apple cider vinegar, water, sugar and salt in a small bowl until sugar dissolves. Add thinly sliced red onion, press down to submerge. Let sit at room temperature for at least 15 minutes (or up to 2 hours). Drain and reserve.
Pico de gallo
Dice the roma tomato into small, even pieces. Finely dice 1/4 small onion. Combine tomato, onion, chopped cilantro, 1 teaspoon lime juice and 1/4 teaspoon salt in a small bowl. Stir, taste and adjust salt or lime as needed. Set aside.
Avocado smash
Halve and pit the avocado. Scoop the flesh into a bowl and mash roughly with a fork until creamy but still a bit chunky. Stir in 1 teaspoon lime juice, 1 teaspoon sea salt, 1/4 teaspoon black pepper and 1/4 teaspoon red pepper flakes. Taste and adjust seasoning.
Toast & eggs
Cook the eggs
Reduce heat to medium. For eggs your way: • Sunny side up: add 1 tsp oil to skillet, crack eggs in, cook 2–3 minutes until whites set but yolks runny. • Over-easy/medium: cook until whites set, carefully flip and cook 15–45 seconds for over-easy or 1–2 minutes for over-medium. • Scrambled: whisk eggs with pinch salt, cook low and stir until soft curds. Adjust timing per your preference. Season eggs with a pinch of flaky salt and a little black pepper.
Assembly
Spoon pico de gallo over the avocado, then top with a few pickled onion slices per slice. Crumble feta evenly over each piece.
Place one cooked egg on each toast (or divide scrambled eggs). If adding smoked salmon, drape 1 oz smoked salmon over each slice before adding egg or alongside as preferred.
Finish with a light sprinkle of flaky sea salt and a grind of black pepper. Serve immediately.
