Method

Preparing the Seal Paste & Wrappers

    Make a simple sealing paste by mixing the all-purpose flour with 2 tbs water until a smooth, slightly thick paste forms. Set aside.

    If using large samosa wrappers, cut each into two long strips about 3–4 inches wide. Keep wrappers covered with a damp towel so they don't dry out.

Beef Filling

    Cook aromatics

    Heat 2 tbs vegetable oil in a medium skillet over medium heat. Add the chopped onion and sauté until translucent and beginning to brown, about 6–8 minutes. Add minced garlic and ginger and cook 1 minute until fragrant.

    Brown the beef

    Increase heat to medium-high, add ground beef to the skillet and break it up with a spoon. Cook until no pink remains, about 6–8 minutes, stirring occasionally.

    Spice and reduce

    Stir in ground cumin, coriander, turmeric, black pepper, red chili powder, and tomato paste. Cook 2–3 minutes, allowing spices to bloom and the tomato paste to darken slightly.

    Finish filling

    Season with salt and fold in chopped cilantro. Reduce heat to low and cook another 1–2 minutes to combine flavors. Taste and adjust seasoning. Remove from heat and let cool to near room temperature (15–20 minutes) before filling wrappers.

Vegetarian Lentil Filling

    Cook lentils

    Place rinsed lentils and 2 cups water (or broth) in a small saucepan and bring to a boil. Reduce to a simmer, cover partially, and cook until lentils are tender but not mushy, about 18–22 minutes. Drain any excess liquid and set aside.

    Cook aromatics

    While lentils cook, heat 2 tbs vegetable oil in a skillet over medium heat. Add chopped onion and sauté until soft and lightly browned, about 6–8 minutes. Add garlic and ginger and cook 1 minute until fragrant.

    Combine and season

    Add cooked lentils to the skillet with onions. Stir in ground cumin, coriander, turmeric, black pepper, red chili powder, and tomato paste. Cook 3–4 minutes, stirring, until mixture is fairly dry and well combined. Fold in chopped cilantro and salt. Taste and adjust. Remove from heat and allow to cool to near room temperature (15–20 minutes) before filling wrappers.

Assembling Sambusa

    Work with one wrapper strip at a time, keeping the rest covered. Place a wrapper on a clean surface with the long side nearest you. Put about 1.5–2 tbs of filling (beef or lentil) near the lower corner, shaping it into a small log.

    Fold the corner of the wrapper over the filling to make a triangle, then continue folding the triangle up the strip until you reach the end. Brush the final edge with the flour paste and press firmly to seal. Repeat to make 18–20 sambusas. Keep assembled sambusas on a tray uncovered briefly so excess moisture evaporates (5–10 minutes).

Frying

    Pour oil into a deep saucepan or pot to a depth of about 3 inches and heat to 175–180°C (350–360°F). If you don't have a thermometer, test by dropping a small piece of wrapper into oil — it should sizzle and rise steadily without browning immediately.

    Fry sambusas in batches (do not overcrowd) for 3–5 minutes, turning occasionally, until golden brown and crisp. Adjust heat to maintain oil temperature. Use a slotted spoon to transfer fried sambusas to a paper towel–lined plate to drain.

    Allow fried sambusas to rest 2–3 minutes before serving so filling finishes cooking and cools slightly. For food safety: ensure beef fillings reach an internal temperature of 71°C (160°F) during cooking before assembling if you partially cook earlier; alternatively, ensure ground beef is fully cooked in the skillet step before cooling and assembling.

Serving & Storage

    Serve hot with lemon wedges, mint/cilantro chutney, or yogurt raita. Sambusas are best enjoyed fresh and crisp.

    To store: keep cooled, unfried assembled sambusas in a single layer on a tray, cover with plastic wrap and refrigerate up to 24 hours. To reheat fried sambusas, bake at 180°C (350°F) for 8–10 minutes to crisp. Cooked leftover sambusas can be refrigerated for up to 3 days; reheat until piping hot.
