Prepare Rice

Rinse and soak
Rinse 2 cups of rice under cold water until the water runs clear to remove excess starch. Transfer to a bowl, cover with about 1 cup of water, and let soak for 20–30 minutes. Drain thoroughly in a fine-mesh sieve.

Toast and simmer
In a medium saucepan, heat 2 tablespoons olive oil over medium heat. Add the drained rice and toast, stirring, for 2–3 minutes until some grains look translucent and lightly glossy. Add 2 cups broth, 1.5 tsp salt, 1 bay leaf and 1/4 tsp turmeric (if using). Increase heat to bring to a gentle boil. Once boiling, reduce heat to low, cover tightly, and simmer for 15–18 minutes, or until liquid is absorbed and rice is tender. Remove from heat and let rest, covered, for 10 minutes. Fluff with a fork and discard the bay leaf.

Cook the corn
While the rice soaks or simmers, heat 2 tablespoons butter in a large skillet over medium heat. Add 2 teaspoons minced garlic and cook 20–30 seconds until fragrant (do not brown). Add 2 cups fresh or frozen corn kernels and sauté for 4–6 minutes until warmed through and starting to color. If using frozen, cook a minute or two longer to evaporate extra moisture.

Season the corn
Stir in 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/2 teaspoon paprika, 1/2 teaspoon black pepper and 1 tablespoon lemon juice. Cook another 1–2 minutes to bloom the spices and allow flavors to meld. Taste and adjust seasoning — add a pinch more salt if needed (the rice and broth already contain salt). Stir in 2 tablespoons chopped fresh parsley off the heat.

Plate the dish by spooning the fluffed rice onto a serving platter or individual plates.

Top the rice evenly with the warm seasoned corn mixture.

Garnish with 2 tablespoons toasted pine nuts or slivered almonds and the remaining tablespoon of chopped parsley. Serve with a dollop of yogurt or labneh on the side for creaminess and a bright contrast.
