    Prep and parboil

    Pat chicken pieces dry. Rub with 2 tbsp lemon juice and 1.5 tsp kosher salt; let sit 10–15 minutes. Place chicken in a medium pot, add 500 ml water (enough to partially submerge) and bring to a gentle simmer. Cook 8–10 minutes just to firm and release impurities. Remove chicken and reserve stock. Discard the parboil water or reserve clarified stock for the sauce (about 250–350 ml). Set chicken aside.

Hard‑Boiled Eggs

    Place eggs in a saucepan and cover with ~1 L cold water and 1 tsp salt. Bring to a boil, then reduce to a gentle boil and cook 9 minutes for fully set yolks. Transfer eggs to an ice bath, cool, peel, and set aside. Optionally prick each egg with a fork so they absorb sauce later.

Berbere-Onion Base

    Caramelize onions slowly

    Heat a large heavy-bottomed pot or Dutch oven over medium-low heat. Add 100 g niter kibbeh (or butter) and 2 tbsp vegetable oil. Add the 6 cups finely chopped onions and a pinch of salt. Cook very slowly, stirring frequently, 30–45 minutes, until onions collapse, turn deep golden-brown and sweet but not burned. Reduce heat as needed to avoid scorching.

    Add aromatics

    Add 6 minced garlic cloves and 2 tbsp minced ginger to the caramelized onions. Cook 2–3 minutes, stirring, until fragrant.

    Spices and tomato

    Stir in 3 tbsp berbere and 1 tbsp paprika; cook 2 minutes to bloom the spices. Add 2 tbsp tomato paste and cook 2–3 minutes, stirring, until the paste darkens and integrates with the onion-spice mixture.

    Deglaze and simmer

    Pour in 250 ml reserved chicken stock (or fresh chicken stock/water) and scrape any browned bits from the pot. Simmer gently 8–12 minutes until the sauce thickens and oil separates slightly from the top. Taste and add 1 tsp salt, adjusting as needed.

    Combine chicken and eggs

    Return the parboiled chicken pieces to the pot, submerging them in the sauce. Add any reserved parboil liquid if the sauce is too thick (add up to remaining 250 ml as needed). Cover, reduce heat to low, and simmer gently 25–35 minutes until chicken is tender and fully cooked through (internal temp 74°C / 165°F for thickest parts). During the last 10 minutes of simmering, nestle the peeled hard‑boiled eggs into the sauce so they absorb flavor. If desired, prick eggs with a fork beforehand to let sauce penetrate.

Finishing & Serve

    Taste the stew and adjust seasoning with salt and up to 1 tsp lemon juice if you want brightness. Spoon a little niter kibbeh or butter on top for gloss, if using. Garnish with a scattering of chopped cilantro or parsley if desired. Serve hot with injera, rice, or flatbread. Doro Wat is often eaten communally—arrange eggs and chicken pieces visibly in the center.
