Method

Protein - seasoned beef

    Prepare and cook beef

    Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking up with a spatula, until it begins to brown, about 6–8 minutes.

    Add the finely chopped onion and minced garlic to the beef, stirring and cooking until the onion is translucent, about 3–4 minutes.

    Stir in chili powder, ground cumin, smoked paprika, dried oregano, kosher salt, and black pepper. Cook spices with the meat for 1 minute to bloom their flavor.

    Pour in 3/4 cup water or low-sodium broth and bring to a simmer. If you want a slightly thicker, saucier beef for nachos and tacos, mix 1 tsp cornstarch with 1 tbs cold water, stir into the simmering meat, and cook 2–3 minutes until slightly thickened. Taste and adjust salt/pepper.

    Reduce heat to low and keep warm until serving. Total time for beef: about 15–20 minutes.

Protein - grilled chicken

    Season and grill chicken

    Pat chicken breasts dry and season both sides with 1/2 tsp kosher salt and 1/4 tsp black pepper. Rub with 2 tbs vegetable oil.

    Optional: before grilling, sprinkle a light mix (1 tbs chili powder + 1 tsp cumin + 1/2 tsp smoked paprika) on both sides for a matching taco flavor.

    Preheat a grill or grill pan to medium-high (about 400°F/200°C). Grill chicken 5–7 minutes per side, until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then slice thinly against the grain into 1/4-inch strips.

    Keep warm for service. Total time for chicken: about 25–30 minutes including resting.

Tortillas & Chips

    Warm the soft flour tortillas: stack them and wrap in foil, then heat in a 300°F (150°C) oven for 8–10 minutes, or microwave covered for 30–45 seconds per 6 tortillas. Keep wrapped to stay soft.

    Pour tortilla chips into a large bowl or serving basket just before serving to keep them crisp.

Queso & Cheeses

    If using prepared queso, gently warm it in a small saucepan over low heat or in a microwave-safe dish in 30-second increments until smooth and saucy. Stir before serving.

    Place shredded cheddar and Monterey Jack cheeses in separate serving bowls or one combined bowl and keep chilled until service.

Fresh Toppings

    Shred the iceberg lettuce and place in a shallow serving tray so guests can easily garnish tacos or nachos.

    Dice the roma tomatoes and finely dice the red onion (if using). Combine with chopped cilantro in a bowl if you prefer a quick pico-style topping, or serve separately.

Cold Creamy Condiments

    Place sour cream in a small bowl. Optionally thin with 1–2 tsp of lime juice for a tangy finish and stir until smooth.

    If making fresh guacamole: mash ripe avocados (not listed separately) with a pinch of salt, 1 tsp lime juice, chopped tomato and cilantro as desired. Otherwise, transfer store-bought guacamole to a serving bowl and garnish with a squeeze of lime.

Assembly & Serving

    Set up the bar: arrange warmed tortillas, tortilla chips, warm queso, both proteins (seasoned beef in a serving pan and sliced grilled chicken on a platter), shredded cheeses, shredded lettuce, diced tomatoes, onions/pico, sour cream, guacamole, pickled jalapeños and hot sauce on a long counter or table.

    To build a taco: place a warm tortilla on a plate, add 2–3 tablespoons of beef or 3–4 slices of chicken, top with shredded lettuce, diced tomato, a drizzle of sour cream, a spoonful of queso or sprinkle of shredded cheese, and finish with jalapeños or cilantro as desired.

    To build nachos: spread tortilla chips on a large platter, scatter warm seasoned beef (or slices of chicken), spoon warm queso over chips, sprinkle shredded cheddar and Monterey Jack, then add lettuce, tomatoes, sour cream dollops and guacamole. Serve immediately so chips remain crisp.

Clean-up & Make-ahead notes

    Beef filling can be made 1 day ahead and refrigerated; rewarm gently with a splash of broth to loosen. Grilled chicken can be cooked ahead and kept covered in the refrigerator; reheat briefly under a low oven (300°F/150°C) wrapped in foil to avoid drying.
