Jalapeño Bites

Prepare jalapeños
Wear gloves. Rinse jalapeños and pat dry. Slice each jalapeño into 1/4-inch thick rounds, removing and discarding seeds and membranes for milder bites or leaving some for more heat. You should have about 24–30 slices from 12 peppers depending on thickness.

Make filling
In a medium bowl, beat the softened cream cheese until smooth. Fold in shredded cheddar, chopped cilantro, garlic powder, 1/2 tsp salt, and 1/2 tsp black pepper until evenly combined.

Fill jalapeño rings
Using a small spoon or piping bag, fill each jalapeño ring with about 1–1.5 teaspoons of the cheese mixture, smoothing the top so the filling is flush with the pepper edge. Place filled rings on a baking sheet lined with parchment and chill in the refrigerator for 15–20 minutes to firm up (this helps the filling stay in place during breading and frying).

Set up breading station
Place flour in a shallow bowl and season with remaining 1/2 tsp salt and remaining 1/2 tsp black pepper. In a second bowl, whisk eggs with milk until combined. In a third bowl, mix panko breadcrumbs with smoked paprika and a pinch of salt.

Bread the filled rings
Working in batches, dredge chilled filled rings first in seasoned flour, shaking off excess, then dip in the egg wash, letting excess drip back to the bowl, then press into the panko mixture to coat all sides. For a thicker crust, repeat the egg and panko step once more. Place breaded rings on a wire rack set over a baking sheet.

Fry the bites
Fry breaded jalapeño bites in small batches (do not overcrowd) for 1.5–2 minutes per side, turning once, until golden brown and the filling is warmed through. Use a slotted spoon to transfer cooked bites to a paper towel–lined baking sheet to drain. Keep warm in a 200°F (95°C) oven if desired while you finish remaining batches.

Finish and season
Sprinkle hot bites lightly with a pinch of smoked paprika and a small pinch of salt while warm. Let rest 1–2 minutes before serving; the filling will be very hot immediately after frying.
Queso Dip

Combine diced white American cheese (or Velveeta) and milk in a small saucepan over low heat. Stir constantly until cheese melts and mixture is smooth, about 5–7 minutes. If too thick, add an additional teaspoon or two of milk to reach desired dip consistency.

Stir in drained diced tomatoes with green chiles, ground cumin, lime juice, and 1/4 tsp salt. Warm through for another 1–2 minutes, taste and adjust seasoning. Remove from heat and stir in chopped fresh cilantro if using.

Transfer queso to a serving bowl and keep warm. Serve alongside jalapeño bites for dipping.
