Prepare glass
Run a lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt placed on a shallow plate to coat about half the rim. Set the glass aside to chill briefly.

Mix primary ingredients
In a cocktail shaker, add 2 oz silver tequila, 0.75 oz Cointreau, 0.75 oz fresh lime juice, 0.5 oz fresh orange juice, and 0.5 tbs agave syrup. Add 2 dashes of orange bitters.

Shake
Fill the shaker with ice (enough to nearly fill). Seal and shake vigorously for 12–16 seconds until the outside of the shaker is frosty and well chilled.

Strain
Double-strain the cocktail into the prepared chilled glass over fresh ice (if serving on the rocks) or without ice if serving straight up. Use a Hawthorne strainer and a fine mesh strainer to catch small ice chips and pulp.

Garnish and balance
Express the oils from the orange twist over the drink by holding it over the cocktail and giving it a quick twist, then drop it in. Add a lime wheel or wedge to the rim. Taste briefly; if the cocktail tastes too tart, add 1/4 tbs agave syrup and stir once. If it's too sweet, add a few drops (about 1/8 tsp) of fresh lime juice and stir gently.

Serve immediately while cold. The High Noon is a bright, citrus-forward tequila cocktail balancing tart lime, sweet orange and agave with a hint of bitters.
