Margarita Base (per batch, makes 2 servings)

Method

Margarita Base (per batch, makes 2 servings)

  1. 1

    Prepare glass rims

Rub a lime wedge around the rim of two chilled margarita or rocks glasses. Spread the coarse salt or Tajín on a small plate and dip the rims into it to coat. Set glasses aside in the freezer to chill while you make the drink.

  2. 2

    Choose flavor and prepare fruit

Pick one flavor: Classic (no fruit), Blueberry, Strawberry, or Peach. If using blueberry: rinse and pat dry; you may reserve a few for garnish. If using strawberry: hull and quarter large berries. If using peach: pit and slice, roughly chop if large. If using frozen fruit, thaw slightly so your blender can puree smoothly.

  3. 3

Make fruit purée (skip for Classic)

Place the chosen 1 cup fruit (blueberries, strawberries, or peaches) into a blender. Add 1 tablespoon of lime juice from the measured fresh lime juice (reduce the measured lime in the base by 1 tbsp if you prefer exactness) and 1/2 oz (1 tbsp) of simple syrup only if the fruit is tart. Blitz until smooth, about 20–30 seconds. For a very smooth texture, strain through a fine-mesh sieve to remove seeds; otherwise keep the purée as-is.

  4. 4

    Combine and blend

In a blender, add: tequila (6 fl oz), orange liqueur (2 fl oz), fresh lime juice (2 fl oz), simple syrup or agave (1 fl oz), the fruit purée (if using; about 3 fl oz purée), and ice (about 3 cups). For Classic (no purée), simply add ice and the base liquids. Secure the lid and blend on high until smooth and slushy, about 30–60 seconds depending on blender strength. If the mixture is too thick, add 1–2 tablespoons of cold water and pulse to reach a pourable frozen consistency. If too thin, add 1/2 cup more ice and re-blend.

  5. 5

    Taste and adjust

Taste the frozen margarita and adjust sweetness or acidity: add up to 1/2 oz (1 tbsp) more simple syrup if too tart, or 1/4 oz fresh lime juice if too sweet. Briefly pulse to incorporate adjustments.

  6. 6

    Serve

Pour the frozen margarita into the prepared chilled glasses. Garnish each glass with a lime wedge and a piece of the fruit corresponding to the flavor (a few blueberries for blueberry, a strawberry slice for strawberry, or a peach slice for peach). Serve immediately with a straw and optional cocktail napkin.
