Cookie Dough

    Remove butter from the fridge 30–60 minutes before starting so it reaches a softened but cool consistency. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and lightly grease if desired.

    In a large mixing bowl or bowl of a stand mixer fitted with the paddle attachment, beat the softened butter, granulated sugar, and packed brown sugar on medium speed until light and fluffy, about 2–3 minutes, scraping the bowl once.

    Add the eggs one at a time, beating for 20–30 seconds after each addition until incorporated. Mix in the vanilla extract until combined.

    In a separate bowl whisk the all-purpose flour, baking soda, and sea salt until evenly distributed.

    With the mixer on low speed, add the dry mixture to the butter mixture in two additions, mixing just until combined and no streaks of flour remain. Do not overmix.

    Using a spatula, fold in the semisweet chocolate chips and the optional chopped toasted nuts until evenly distributed throughout the dough.

    Using a 1.5 tablespoon cookie scoop (or a heaping tablespoon), portion uniform dough mounds about 1 to 1 1/4 inches in diameter and place them 2 inches apart on the prepared baking sheets. For a platter of varied sizes, portion some larger mounds (2 tbsp) and some smaller (1 tbsp).

Baking & Cooling

    Bake one sheet at a time in the preheated 350°F (175°C) oven for 9–12 minutes. Bake until the edges are golden and centers are set but still soft — the cookies will continue to set as they cool. Rotate the sheet halfway through baking for even color.

    Remove the baking sheet from the oven and let the cookies rest on the sheet for 5 minutes to finish setting. Then transfer cookies to a wire rack to cool completely. Repeat with remaining dough.

    Line each serving platter or board with parchment. Group cookies by size or style (classic, extra-chips, with-nuts) to create visual interest. Stack some cookies in small towers (2–3 high) and fan others in a single layer so guests can easily pick them up.

    Lightly dust selected sections with powdered sugar for contrast. Sprinkle a pinch of sea salt flakes on a few cookies to highlight the chocolate. If transporting, let cookies cool fully and stack in single layers separated with parchment to avoid sticking.
