Method

Burgers

    Form patties

    Divide the ground beef into four equal portions (about 8 oz / 1/2 pound each). Gently form each portion into a round patty about 3/4 inch thick and slightly wider than the buns. Do not overwork the meat. Make a shallow 1/2-inch wide indentation in the center of each patty with your thumb to minimize doming during cooking.

    Season patties

    Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking (about 30 seconds beforehand) to avoid drawing out moisture.

    Preheat and cook

    Heat a large cast-iron skillet or flat-top griddle over medium-high heat. Add the vegetable oil and spread to coat the surface. When the oil is shimmering and the pan is hot (about 375°F surface temperature), place the patties on the cooking surface leaving space between them. Cook for 3 to 4 minutes without moving to develop a crust.

    Flip and finish

    Flip the patties and cook for another 3 to 4 minutes for medium doneness. In the last 30-45 seconds of cooking, place one slice of American cheese on each patty, cover the skillet with a lid or tent with foil to melt the cheese for about 30-45 seconds. Cook longer if you prefer medium-well to well done (add 1-2 minutes per side as needed).

    Rest patties

    Remove the patties from the heat and let them rest on a warm plate for 2 minutes to redistribute juices.

Buns

    While the patties rest, split the buns and spread softened butter evenly on the cut sides. Place buns cut-side down on the same skillet or griddle over medium heat and toast until golden brown, about 30–60 seconds. Keep toasted buns warm in a low oven (170°F) or covered with foil.

    Prepare and arrange the toppings on a serving platter so guests can build their own burgers. Separate and lay out the lettuce leaves. Slice the tomato into 1/4-inch rounds and arrange in a small stack. Peel and separate the red onion into rings and place on a small plate. Put pickle slices in a small bowl. Keep everything chilled until serving.

    Place ketchup, mustard, and mayonnaise in individual ramekins or squeeze bottles and set them on the service tray so guests can add condiments to taste.

Assembly and service

    Serve each cooked cheeseburger patty and a toasted bun separately, with all toppings and condiments on the side. Suggest build: bottom bun, patty with melted American cheese, lettuce, tomato, onion, pickles, desired condiments, then top bun. Provide napkins and plates for a cookout-style experience.
