Peel the onions and slice into 1/4-inch thick rings. Gently separate rings and place them in a large bowl.

Set up a breading station with three shallow bowls or pans: (1) dry dredge, (2) wet batter, (3) panko mix.

Dry Dredge
Whisk together 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp kosher salt, and 1/2 tsp black pepper in the first bowl. This helps the batter cling and creates a light crust.

Wet Batter
In the second bowl, whisk 2 eggs with 1 cup buttermilk and 1 tsp hot sauce until smooth.

Panko Mix (Final Coat)
In the third bowl, combine 2 cups panko, 1/2 cup seasoned breadcrumbs, 1 tsp smoked paprika, and 1/2 tsp garlic powder. Mix to distribute spices evenly.

One at a time: dredge each dry onion ring in the flour mixture, shaking off excess; dip into the buttermilk-egg batter, letting excess drip off; then press into the panko mix to coat thoroughly. For extra thickness (double-dipped), repeat the batter and panko steps once more: dip the panko-coated ring back into the batter and again into panko, pressing to adhere. Place breaded rings on a wire rack set over a sheet tray. Let rest 10 minutes to set the coating before frying.
Frying & Finishing

Pour oil into a heavy deep pot or deep fryer to a depth of about 3 inches (about 1.0–1.5 L of oil depending on vessel). Heat oil to 350°F (175°C). Use a thermometer to maintain temperature; too hot browns the crust before heating through, too cool makes them greasy.

Fry the rings in batches (do not overcrowd) for 2.5–3.5 minutes per batch, or until golden brown and crisp. Turn rings gently with a slotted spoon or spider to ensure even browning. Maintain oil temperature around 335–360°F by adjusting heat between batches.

Remove rings to a wire rack set over a sheet tray or to paper towels to drain for a minute, then transfer to clean wire rack. Immediately season with finishing salt and a light crack of black pepper while still hot.

Keep cooked rings warm in a 200°F (95°C) oven on a rack while finishing remaining batches so they stay crisp.
Housemade Sauce (Moose's Sauce)

Whisk together 3/4 cup mayonnaise, 1/4 cup ketchup, 1 tbsp Dijon mustard, 1 tsp Worcestershire sauce, 1 tsp apple cider vinegar, 1/2 tsp hot sauce, 1/2 tsp smoked paprika, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp salt, and 1/4 tsp black pepper until smooth and homogenous.
