Chill glass

If desired, place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you assemble ingredients to ensure the cocktail stays cold.

Fill a cocktail shaker halfway with ice.

Build cocktail

Add 2 oz Kill Devil Rum, 0.75 oz Ancho Reyes Verde, 0.75 oz fresh lime juice, and 0.5 oz simple syrup to the shaker.

Shake

Shake vigorously for 10–12 seconds until the outside of the shaker is well chilled (about a heavy frost forms). This dilutes and chills the mixture and integrates the liqueur and citrus.

Prepare glass

Discard any ice/water from the chilled glass and fill it with fresh cubed ice (about 1 cup).

Strain and top

Double-strain the shaken mixture into the prepared glass over fresh ice. Top gently with 3 oz chilled ginger beer, pouring slowly to preserve carbonation and create a slight foamy head.

Garnish

Garnish with a lime wheel or wedge on the rim. If using, tuck a cilantro sprig next to the lime and float a thin jalapeño slice on top for extra visual heat and aroma.

Serve immediately with a short straw. Advise guests to stir lightly before drinking if the ginger beer has separated from the spirit layer.
