Method
Cocktail
Prepare cocktail
Chill a coupe or rocks glass by filling with ice water while you mix the drink.
Combine ingredients
In a cocktail shaker, add 2 oz Kill Devil Silver Rum, 0.5 oz Bacardi coconut simple syrup, 1 oz fresh pineapple juice, and 0.5 oz fresh lime juice.
Add ice and shake
Fill the shaker with ice (about 6 oz by volume). Secure the lid and shake vigorously for 12–15 seconds, until the shaker exterior feels very cold and the mixture is well diluted and slightly frothy.
Optional bitters
If using, add 1 dash of Angostura bitters into the shaker before a quick final shake (5 seconds) or float a dash on top after pouring for aromatic complexity.
Strain and serve
Dump the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or strain over fresh ice in a rocks glass, depending on preference.
Garnish
Garnish with a pineapple wedge or a small pineapple leaf on the rim and optionally a lime wheel on the rim or floated on top. Serve immediately.
