Prepare ginger

Peel the fresh ginger with a spoon or vegetable peeler and slice it thinly (about 1/8 inch). If you prefer more intense flavor, roughly chop after slicing.

Make syrup

In a small saucepan combine 1 cup water and 1 cup granulated sugar. Add the sliced ginger and optional 1 tsp ground ginger. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.

Simmer

Reduce heat to low and simmer uncovered for 15 minutes to extract ginger flavor. Taste after 10 minutes and simmer up to 20 minutes if you want a stronger concentrate.

Finish syrup

Remove saucepan from heat. Stir in 1 tablespoon lemon juice to brighten the flavor. Let the syrup cool slightly for 10 minutes.

Strain and store

Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof container, pressing the solids to extract liquid. Discard solids. Cool to room temperature, then refrigerate. Syrup will thicken slightly as it cools and keeps for up to 2 weeks refrigerated.

To finish the ginger ale

Prepare glassware

Fill four serving glasses with ice (about 1/2 cup ice per glass) or a total of 2 cups as listed under ingredients.

Add syrup

Measure 2 tablespoons (approx. 1/8 cup) of cooled ginger syrup into each glass. The recipe lists 1/2 cup total syrup for 4 servings; adjust to taste for sweeter/stronger ginger flavor.

Top with soda

Pour 1 cup (about 8 fl oz) of chilled club soda or sparkling water into each glass over the syrup and ice. Stir gently once to combine, being careful to preserve carbonation.

Garnish and serve

Cut the lemon or lime into wedges. Squeeze a wedge into each glass if you want extra brightness, then drop the wedge in. Add a sprig of mint to each glass if using. Serve immediately.

Adjustments

For a stronger ginger bite, add more syrup (up to 3 tablespoons per glass). For a less sweet version, dilute with additional chilled club soda. If you want alcoholic ginger ale, stir in 1–1.5 oz of vodka or dark rum per glass.
