Mole Sauce Preparation

Prepare the Chiles

Remove stems and seeds from the dried chiles. Rinse them under warm water and soak them in a bowl of hot water for about 15 minutes or until softened.

Saute Aromatics

In a large saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Blend the Sauce

Drain the soaked chiles and add them to the saucepan along with the chopped tomatoes, chicken broth, ground cumin, ground cinnamon, and chocolate. Blend all ingredients until smooth using an immersion blender or transfer to a regular blender in batches.

Cook the Mole

Return the blended sauce to the saucepan and bring to a simmer. Reduce heat to low and simmer for about 30 minutes, stirring occasionally. Adjust seasoning with salt and black pepper to taste.
