Prepare the Sausage

In a skillet over medium heat, add olive oil. Once hot, add the chopped onions and sauté until translucent, about 3-4 minutes. Add the Mexican sausage to the skillet, breaking it up with a spatula, and cook until browned and cooked through, about 8-10 minutes.

Melt the Cheese

Reduce the heat to low. Gradually add the Monterey Jack cheese to the skillet, stirring continuously until melted and creamy. If the mixture is too thick, you can add a splash of water or milk to reach your desired consistency.

Prepare the Tortillas

In a separate skillet, lightly toast the corn tortillas over medium heat for about 30 seconds on each side until warm and pliable.

Assemble the Tacos

Spoon the chori queso mixture onto each corn tortilla. Top with chopped cilantro, and season with salt and black pepper to taste.

Serve immediately while warm, with any additional toppings like salsa or avocado if desired.
