Olives

Garlic mayo is a creamy sauce blending mayonnaise with minced garlic, often used to enhance various dishes.

Trim any excess fat from the beef tenderloin and pat dry with paper towels. Season all sides with 0.5 tsp salt and 0.25 tsp black pepper.

Heat olive oil in a heavy-bottom skillet over medium-high heat. Sear the beef on all sides until deeply browned, about 4-5 minutes per side. Remove from pan and rest.

In the same skillet, reduce heat to medium. Add chopped shallots and minced garlic; sauté until translucent and fragrant, about 2 minutes.

Pour in 1 cup Château Haut-Segottes wine to deglaze, scraping up browned bits. Bring to a simmer and reduce by about half, 6-8 minutes.

Stir in tomato paste and thyme. Cook 1-2 minutes to bloom the flavors.

Add beef stock and bay leaf. Simmer until the sauce thickens slightly, about 5-7 minutes.

Return beef to the skillet. If using oven finish, transfer to a preheated oven at 200°C / 400°F and roast until the internal temperature reaches desired doneness (approximately 6-10 minutes for medium-rare, depending on thickness).

Remove bay leaf. Whisk in cold butter pieces one by one to emulsify into a glossy sauce. Adjust with salt and pepper to taste.

Slice beef tenderloin, spoon red wine reduction over the top, and serve with sides such as roasted potatoes or sautéed mushrooms.
