Prep the potatoes
Cut each scrubbed russet potato into 1/4- to 1/3-inch sticks. Place cut fries in a large bowl of cold water and soak 20–30 minutes to remove excess starch. Drain and rinse, then spread on a clean kitchen towel and pat completely dry.
Optional toss with cornstarch (for extra crisp)
If using cornstarch, sprinkle 1 tablespoon over the dried fries and toss until evenly coated. This helps create a crisp exterior when frying or baking.
Cook the fries (deep-fry method)
Heat neutral oil in a heavy pot or deep fryer to 325°F (163°C). Fry the potatoes in batches without browning, about 3–4 minutes per batch, then remove and drain on paper towels. Increase oil temperature to 375°F (190°C) and return fries in batches to fry until golden and crisp, 2–3 minutes. Drain and immediately season with 1 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper and 1/2 teaspoon garlic powder. Keep warm in a single layer on a sheet pan in a 200°F (95°C) oven while finishing the beef.
Cook the fries (oven-bake method)
Preheat oven to 425°F (220°C). Toss dried (and cornstarch-coated, if using) fries with 2 tablespoons oil and spread in a single layer on a rimmed baking sheet. Roast, turning once, until golden and crisp, 30–35 minutes. Season with salt, pepper and garlic powder immediately after removal.
Beef and BBQ Sauce
Season and sear the beef
Pat the thinly sliced steak dry with paper towels. Season both sides with 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add the steak in an even layer (work in batches if needed) and sear until browned, about 1–2 minutes per side for thin slices. Remove the seared steak to a plate and set aside.
Make the BBQ sauce in-pan
Stir in 3/4 cup prepared BBQ sauce, 1 tablespoon apple cider vinegar, 1 teaspoon Worcestershire sauce, 1 tablespoon brown sugar, 1/2 teaspoon smoked paprika and 1/4 teaspoon red pepper flakes (if using). Bring the mixture to a gentle simmer, scraping any browned bits into the sauce. Taste and adjust seasoning — add a pinch more salt or a splash of vinegar if needed.
Assemble & Serve
Divide fries between plates or one large platter. Top evenly with the saucy BBQ beef. Drizzle with the extra 1/4 cup BBQ sauce if desired. Sprinkle chopped parsley and sliced scallions over the top. Serve immediately with lime wedges on the side if using.
