Pecan Crusted Fried Shrimp and Oysters

Preparation
Prepare the Breading
Set up a breading station with three shallow dishes. Place flour in the first, beaten eggs in the second, and a mixture of cornmeal, chopped pecans, salt, and black pepper in the third.
Heat the Oil
In a large skillet or deep fryer, heat oil to 350°F (175°C).
Fry the Shrimp and Oysters
Fry shrimp in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels. Repeat for oysters, frying for about 1-2 minutes.
Prepare Beurre Blanc
In a saucepan, combine 1/4 cup white wine, 1/4 cup white wine vinegar, and 1 shallot, simmer until reduced by half. Lower the heat and whisk in 1 cup of cold unsalted butter, piece by piece, until emulsified. Season with salt and pepper.
Serve
On a platter, arrange the fried shrimp, oysters, and jumbo lump crab. Drizzle with beurre blanc and serve immediately.
