Prepare the Herb Mixture
In a small bowl, combine the chopped parsley, cilantro, basil, minced garlic, olive oil, salt, and black pepper to create the herb crust mixture.
Crust the Tuna
Pat the tuna steaks dry with paper towels. Press the herb mixture evenly onto both sides of the tuna steaks.
Sear the Tuna
Heat a non-stick skillet over high heat. Add a splash of olive oil. Once hot, add the tuna steaks and sear for 1-2 minutes on each side for rare doneness.
Prepare Jasmine Rice
While the tuna is searing, cook jasmine rice according to package instructions.
Make Spicy Ponzu Sauce
In a small bowl, whisk together soy sauce, rice vinegar, lime juice, and a pinch of chili flakes to taste for the spicy ponzu sauce.
Serve
Slice the seared tuna and serve it on a bed of jasmine rice with a drizzle of spicy ponzu sauce. Serve alongside tempura asparagus.
