Method

Cucumber–Mint–Jalapeño Syrup

  1. 1

Combine sugar and water in a small saucepan and bring to a gentle simmer over medium heat, stirring until the sugar dissolves.

  2. 2

Add the chopped cucumber, mint leaves, and halved jalapeño to the saucepan. Simmer gently for 5 minutes to infuse flavors—do not boil vigorously.

  3. 3

Remove the pan from heat and let the mixture steep, covered, for 20–30 minutes for a stronger infusion. Stir in lime zest if using.

  4. 4

Strain the syrup through a fine-mesh sieve or cheesecloth into a clean container, pressing on solids to extract flavor. Discard solids. Cool to room temperature, then refrigerate. Syrup will keep 1–2 weeks refrigerated.

Cocktail

  1. 5

    Prep the glass

Fill a highball or Collins glass with ice to chill. If desired, rim the glass lightly with lime.

  2. 6

In a mixing glass or shaker filled with ice, combine 2 oz Tito's vodka, 0.75 oz fresh lime juice, and 0.75 oz cucumber–mint–jalapeño syrup.

  3. 7

Stir gently for 10–15 seconds (or roll between two tins) to chill and integrate — this keeps the tonic from flattening when added.

  4. 8

Discard ice from the chilled serving glass and add fresh ice. Strain the mixed vodka, lime, and syrup into the glass.

  5. 9

Top with about 3 oz chilled tonic water. Stir once gently to combine.

  6. 10

Garnish with a lime wheel and either a cucumber ribbon threaded inside the glass or a fresh mint sprig. If you want a touch of heat up front, float a thin jalapeño slice on top.

  7. 11

Serve immediately with a straw or stirrer.
