Method
For the Beer Battered Cod
Prepare the Batter
In a large bowl, mix the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well combined.
Add the Beer
Gradually whisk in the beer until the batter is smooth and slightly thick. Let it rest for about 10 minutes.
Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
Coat the Cod
Dredge the cod fillets in a little flour to help the batter stick, then dip each fillet into the batter, coating it evenly.
Fry the Cod
Carefully place the battered cod in the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side or until golden brown and crispy.
Drain and Serve
Remove the cod from the oil and place it on a paper towel-lined plate to drain excess oil. Serve hot.
For the Fries
Prepare the Potatoes
Peel the potatoes and cut them into even-sized sticks or wedges.
Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps achieve crispiness.
Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry the Potatoes
Carefully add the soaked potatoes to the hot oil in batches. Fry for about 5-7 minutes until they are golden brown and crispy.
Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.
