Prepare the Rice
In a saucepan, bring 1 cup of water to a boil. Add 1 cup of jasmine rice, cover, and reduce heat to low. Cook for about 15 minutes or until the rice is tender. Remove from heat and let sit covered.
Sauté Vegetables
In a large skillet or pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
Add Creole Stew Base
Stir in the creole seasoning, diced tomatoes, and broth. Bring to a simmer and let cook for 15-20 minutes, allowing the flavors to meld. Adjust seasoning with salt and black pepper to taste.
Serve
Spoon the étouffée over a bed of jasmine rice and enjoy!
