Crispy Mac N Cheese Bites Recipe

Macaroni & Cheese

    Cook pasta

    Bring 6 cups water to a rolling boil in a medium pot with 1 tsp salt. Add 2 cups elbow macaroni and cook 1 minute less than package directions for al dente (about 7-8 minutes). Drain well and return to the pot.

    Make cheese sauce

    In a medium saucepan over medium heat, melt 2 tbs unsalted butter. Whisk in 2 tbs flour and cook 1 minute until bubbly and lightly golden (roux). Slowly whisk in 1.5 cups whole milk, whisking to remove lumps; cook 3–4 minutes until sauce thickens and coats the back of a spoon.

    Add cheeses & seasonings

    Lower heat to low and stir in 1 cup sharp cheddar, 1/2 cup mild cheddar, 1/2 cup mozzarella, and 2 tbs cream cheese until melted and smooth. Stir in 1 tsp Dijon mustard, 1/2 tsp Worcestershire sauce, 1/2 tsp black pepper and 1/2 tsp salt. Taste and adjust seasoning.

    Combine & bind

    Fold the cheese sauce into the drained pasta until evenly coated. Let cool 5–10 minutes, then beat 1 large egg lightly and stir into the mac & cheese to help it set. Press mixture into an 8x8-inch square pan (lightly buttered or lined) to an even 1/2-inch to 3/4-inch thickness. Smooth top, cover tightly, and chill in refrigerator at least 2 hours (or up to overnight) until firm.

Breading & Frying

    Prepare breading stations

    Line a baking sheet with parchment. Place 3 shallow bowls: one with 3/4 cup flour, one with 2 large eggs beaten with 2 tbs milk (egg wash), and one with 1 cup panko breadcrumbs mixed with 2 tbs grated Parmesan and 1 tsp Italian seasoning. Season flour lightly with a pinch of salt and pepper.

    Cut chilled mac & cheese

    Unmold chilled mac & cheese onto a cutting board. Using a sharp knife or bench scraper, cut into 16 (1.5-inch) squares or 12 larger squares depending on preferred size. For clean edges, dip knife in hot water and dry between cuts. If mixture is very soft, return to chill for 15–30 minutes before cutting.

    Bread the squares

    Working one at a time: dredge a mac square in flour, shaking off excess; dip into egg wash, letting excess drip; press into breadcrumb mixture to fully coat, pressing gently to adhere. For extra-crisp double coating, repeat egg wash and breadcrumbs a second time. Place coated pieces on prepared baking sheet. Optionally chill breaded pieces 15 minutes to set coating.

    Heat oil & fry

    Pour about 1 cup vegetable oil into a heavy skillet (or fill a small pot with oil to 1.5 inches). Heat over medium-high to reach 350°F (175°C) — small breadcrumbs should sizzle immediately. Fry 3–4 pieces at a time (don’t overcrowd) for 2–3 minutes per side, turning carefully with tongs, until golden brown and crisp. Total fry time ~4–6 minutes per piece depending on size. Transfer to a wire rack set over a baking sheet (or paper towel-lined plate) to drain and keep warm. If baking instead of frying: preheat oven to 425°F (220°C) and bake on a greased sheet for 12–15 minutes, flipping halfway, until crisp and golden.

    Finish & serve

    Let bites rest 2–3 minutes after frying to firm up. Arrange on a serving platter and garnish with extra grated Parmesan or chopped chives if desired. Serve hot with House Ranch dipping sauce.

House Ranch Dipping Sauce

    In a small bowl, whisk together 1/2 cup mayonnaise, 1/4 cup sour cream and 2 tbs buttermilk until smooth. Stir in 1 tbs finely chopped chives, 1 tbs finely chopped parsley, 1/2 tsp dill (or 1/2 tsp dried dill), 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp lemon juice, 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust consistency with more buttermilk if needed. Chill at least 30 minutes to meld flavors. Serve chilled or at room temperature alongside mac n cheese bites.
