Method

Waffles (makes 4 Belgian-style waffles)

    Preheat and prepare

    Preheat your waffle iron according to manufacturer instructions. Lightly grease the plates with melted butter or nonstick spray so waffles release cleanly.

    Mix dry ingredients

    In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

    Mix wet ingredients

    In a separate bowl or large measuring cup, beat the eggs lightly. Whisk in the milk, melted butter, and vanilla extract until homogeneous.

    Combine batter

    Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently just until combined — batter should be slightly lumpy but without large streaks of flour. Do not overmix.

    Cook waffles

    Spoon or pour the recommended amount of batter onto the preheated waffle iron (usually 1 to 1 1/2 cups for Belgian waffles; consult your iron). Close and cook until golden brown and crisp, about 4–6 minutes depending on your iron. Transfer waffles to a wire rack in a warm oven (200°F / 95°C) to keep crisp while you finish cooking the rest.

Strawberry Compote

    In a medium saucepan combine the quartered strawberries, granulated sugar, lemon juice, and 2 tablespoons water. Stir to combine.

    Place the pan over medium heat and bring to a gentle simmer. Cook, stirring occasionally, until the strawberries release their juices and begin to soften, about 6–8 minutes.

    If you prefer a thicker compote, stir the 1 teaspoon cornstarch into 1 tablespoon cold water to make a slurry, then drizzle into the simmering fruit while stirring. Cook 1–2 more minutes until the compote thickens slightly. Taste and adjust sweetness or lemon as needed. Remove from heat and let cool slightly; compote will thicken further as it cools.

Blueberry Compote

    In a medium saucepan combine the blueberries, granulated sugar, lemon juice, and 2 tablespoons water.

    Warm over medium heat until the blueberries begin to pop and release juices, stirring occasionally, about 5–7 minutes.

    For thicker texture, dissolve 1 teaspoon cornstarch in 1 tablespoon cold water and stir into the simmering berries, cooking 1–2 more minutes until slightly thickened. Remove from heat and cool slightly.

Cinnamon Apple Compote

    In a medium saucepan combine the diced apples, brown sugar, ground cinnamon, lemon juice, and 3 tablespoons water.

    Cook over medium heat, stirring occasionally, until the apples are tender but still hold shape, about 8–10 minutes. If mixture looks dry, add a splash more water.

    If you want a smoother, thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into the pan, cooking 1–2 more minutes. Remove from heat and let cool slightly.

Whipped Cream & Assembly

    Make the whipped cream: chill a mixing bowl and beaters if possible. Pour the heavy whipping cream into the bowl, add powdered sugar and vanilla extract. Whip on medium-high speed until soft peaks form, about 2–3 minutes (do not overwhip).

    To assemble (per serving): place one warm Belgian waffle on a plate. Spoon 1/3 to 1/2 cup of your chosen fruit compote over the waffle. Top with a generous dollop (about 2–3 tablespoons) of freshly whipped cream. Garnish with a mint leaf if desired. Serve immediately so waffles stay crisp.

    Repeat for remaining waffles and compote. Leftover compote can be refrigerated in an airtight container for up to 4 days and gently reheated before serving.
