Four Cheese Fresh Fruit Waffle Recipe

Our delicious malted Belgian waffle cut into four wedges. Smothered in our homemade four cheese blend then topped with fresh blueberries (in season) and fresh strawberries, finished with whipped cream.

Waffle (Malted Belgian)

    Preheat and prepare

    Preheat your Belgian waffle iron to medium-high heat (follow manufacturer instructions). Lightly brush or spray the iron with the melted unsalted butter so waffles don't stick.

    Mix dry ingredients

    In a large bowl whisk together all-purpose flour, malted milk powder, granulated sugar, baking powder, baking soda, and fine salt until evenly combined.

    Separate egg and combine wet ingredients

    Separate the egg. In a medium bowl whisk the egg yolk with milk, melted butter and vanilla extract until smooth. Set aside. In a separate clean bowl, beat the egg white with a pinch of salt until soft peaks form.

    Combine batter

    Pour the wet mixture into the dry ingredients and fold gently until just combined — a few small lumps are fine. Fold in about half of the beaten egg white to loosen the batter, then gently fold in the remaining egg white to keep the batter airy without overmixing.

    Cook waffles

    Spoon batter into the preheated waffle iron to make one large Belgian waffle (or per your iron size), spreading gently to edges. Close and cook according to your iron's timing until golden brown and crisp, about 4–6 minutes. Transfer waffle to a cooling rack and let rest 2 minutes. Cut the waffle into four equal wedges and keep warm in a low oven (200°F / 95°C) while you assemble.

    Prepare cheese

    While waffles are cooking, combine shredded mozzarella, fontina, sharp cheddar and grated Parmesan in a bowl. Season with freshly ground black pepper and the optional thyme leaves. Toss gently to distribute evenly.

    Melt cheese on waffle

    Preheat broiler to high with a rack about 6–8 inches from the heat. Arrange the four waffle wedges on an oven-safe baking sheet or cast-iron skillet in a single layer. Distribute the four-cheese blend evenly over each wedge so each receives a generous sprinkle. Broil 1–2 minutes until the cheese is melted and bubbling and begins to lightly brown — watch carefully to avoid burning. Alternatively, place skillet over low flame until cheese melts. Remove from oven and let rest 30 seconds.

Fruit & Topping

    Prepare whipped cream

    Chill a medium bowl and beaters if possible. Pour heavy cream into the chilled bowl; add powdered sugar and lemon zest if using. Whip on medium-high speed until soft peaks form (about 2–3 minutes). Do not overwhip; you want a light, pillowy cream.

    Prep fruit

    Rinse and gently pat dry the blueberries. Hull and slice the strawberries thinly. Toss strawberries with a light pinch of sugar if desired to macerate for 5–10 minutes (optional).

    Assemble

    Place the four cheese–topped waffle wedges on a serving plate. Evenly distribute the sliced strawberries and blueberries over the melted cheese. Top each wedge or the center with a generous dollop of whipped cream. Finish with an extra sprinkle of grated Parmesan or a few thyme leaves if you want a savory-herb contrast and an optional light dusting of powdered sugar for visual appeal.

    Serve immediately while cheese is warm and melty and waffle is crisp. Each serving is intended to be eaten warm to enjoy the contrast of savory cheese, fresh fruit, and whipped cream.
